My Journey


I have been a healthy living enthusiast for over 25 years primarily focusing on fitness through regular exercise and healthy eating habits.  I have read a number of books and done a great deal of research on health and fitness and implemented practices to achieve my desired result…optimum health.   I made gradual but highly impactful changes in my diet over the years including eliminating meat, dairy, refined sugar, and salt.  I ate more vegetables both steamed and raw.   Prior to transitioning to 100 percent raw, I was eating primarily beans, brown rice, vegetables, fruits, and processed  “healthy” snacks like Rice Dream and Veggie Booty.

In 2003, my research led me to read two life changing books:  Healing With Whole Foods by Paul Pitchford, and Conscious Eating by Gabriel Cousens, MD and I realized my health potential could increase tremendously through the consumption of raw, ripe, organic fruits vegetables nuts and seeds and the elimination of all processed/cooked foods from my diet.   I embraced the idea; my challenge….how to practically implement this natural diet.    I attended a seminar with the Boutenkos; an inspiring family on the raw food path, and tasted the most delicious prepared raw food.  I was hooked!  I purchased several “non cook” books and began experimenting. I attended Living Light Culinary Arts Institute and was able to refine my skills in raw food preparation and increase my knowledge and expertise in the science of raw food nutrition.

I have completed extensive study with experts in related fields. My qualifications include:

  • Graduate of the Living Light International Culinary Arts Institute
  • Certification as a Raw Culinary Arts Associate Chef and Instructor
  • Certification as an Advanced Raw Foods Nutrition Educator
  • Certification in Living Foods Lifestyle from the Ann Wigmore Natural Health Institute
  • Training from the Institute of Nutritional Endocrinology
  • Emphasis on food as medicine to correct hormonal imbalances that cause health problems

In addition to the many physical and mental benefits I achieved, I soon began to have greater enlightenment and an increased awareness that optimum health was not just about nutrition and exercise, though you certainly cannot achieve wellness without these two elements.  Other elements such as clean water, fresh air, nurturing relationships, and a purposeful life,  are also essential elements for vibrant living.

I realized that transitioning to a raw food diet was the portal for my transition to a raw or more natural lifestyle.

My journey from conscious eating to conscious living gave me the courage to pursue my passion.  Simply Living Raw was born from my intense desire and commitment to guide others to take charge of their health and happiness.
